Coconut Lime Foam

Target Yield Approximately 200 ml foam base (enough for ~12–15 drinks)


Ingredients
  • Coconut milk (full fat): 140 ml
  • Simple syrup (1:1): 20 ml
  • Fresh lime juice: 10 ml
  • Lime zest: 1 g
  • Egg white: 1 large (30 ml)
  • Salt: 1 small pinch (~0.3 g)
  • Xanthan gum: 0.15 g

Process
1. Combine
Add all ingredients to a blender:
  • coconut milk
  • simple syrup
  • lime juice
  • lime zest
  • egg white
  • salt
  • xanthan gum

2. Blend
Blend for 10–15 seconds until fully combined.

3. Strain
Strain through a fine mesh strainer to remove zest and solids.

4. Charge
  • Pour into iSi whipper
  • Charge with 1 N₂O cartridge
  • Shake 10–15 times

5. Chill
Refrigerate for 30 minutes before use.

Usage
  • Dispense a light foam layer on top of the drink
  • Do not stir in initially; drink through the foam

Storage
  • Store in iSi in the refrigerator
  • Shake before each use

Shelf Life
  • Best quality: same day
  • Usable: up to 24 hours
  • Discard after 24 hours

Notes
  • Do not overuse xanthan gum; too much will create a thick or slimy texture
  • Ensure mixture is fully strained to avoid clogging
  • Foam should be smooth with tight bubbles, not airy or whipped
